Gosh I just love a good bite sized cookie, or any sized cookie really. These were so rich and creamy and all around one of the best chocolatey cookie I have had. These were a hit within the crowd and slightly addictive! Beware of that before you make!!!
You can enjoy them plain or with a dollop of a peanut better mixture.


Ingredients
3/4 cup plus 1 Tbs AP flour
3/4 tsp baking powder
3 large eggs, room temp
1 1/4 cups of granulated sugar
3/4 tsp salt
1 Tbs canola oil (I used coconut oil)
1 tsp vanilla
5 Tbs unsalted butter
8 oz semisweet or bitter sweet chocolate (I used 4oz of each)
1/4 cup black cocoa powder
Optional peanut butter mixture:
1/2 cup of peanut butter
3 Tbs powdered sugar
little coconut oil (to make it runny)
Directions
Preheat your oven to 350*.
In a small bow, whisk together the flour and baking powder, set aside.
In the bowl of your stand mixer, beat the eggs, sugar and salt on medium-high speed until the mixture is pale and doubled in volume, about 6-8 minutes. Turn the mixer on low speed and add oil and vanilla until combined.
While your mixture is blending, make your chocolate sauce. In a saucepan, on low heat, melt your butter. Add the chocolate and melt together, stirring frequently. Once off of the heat, add in your cocoa powder and whisk until completely combined.
Add the chocolate mixture to your egg mixture on low speed until combined. Add the flour mixture and mix on low speed. Let this sit at room temp for 5 min.
Use whichever size cookie scoop you would like, scoop cookies onto your prepared pan.
Bake the cookies for 8-12 min. Cool on cookie sheet for 10 min. Transfer to a cooling rack and store in an airtight container for up to 2 days.
