Chess Squares

If there is one thing in this world I know to be true, is that my husbands grandma was GOLD. She was one of the best and will always be a saint in my husbands eyes, and mine too, if I’m honest.

Our families have been intertwined from a long time ago. Our grandmas were the best of friends, traveling around the country and cruising to Alaska and back. (I love that they were so close.) Then our parents went to the same high school and were friends as well. My daddy and my father in law have such fond memories of what our small town used to be and the things they did for “fun.”

Michael and I met at the very beginning of high school, even though we had known about the other for many years before that. Daryle said it best in his song, “I loved you before I knew you.” For those of you that know us, the rest is history. But with dating all through high school, we spent a lot of time with his grandma. Eating meals at her house, dropping by for a quick snack while roaming the farm or just rocking in the recliners and talking about our day. I wish more than ever that I could’ve learned so much more from her. Her heart was always so big and her doors were open to everyone.

Michael being the first grandchild and the first boy in the family, I think it is safe to say, he was spoiled. He was dotted on even into his high school years. I saw the love in her eyes for him and it melted my heart. If Michael asked for a certain meal, she made sure it was ready. If he asked for a snack, she made double. I think you catch my drift. So, with that, Michael introduced me to her chess squares. A literal piece of heaven. I have tried for many years to recreate those like she did and have not mastered them yet. Either she put a curse on her kitchen or she left out a certain “tip” that I haven’t figured out. I will keep trying forever though, that’s just how good these are.

I don’t normally use a box mix, just because I love things homemade, but in raising kids and working full time, sometimes box mixes are still homemade. This is an easy recipe filled with so much goodness.

Ingredients:

1 egg

1 box of Duncan Hines Butter Golden cake mix

1 stick of butter

1 cup of chopped pecans (optional) Picture above is without

Mix all ingredients together and press into prepared (sprayed with Bakers Joy) 9 x 13 pan. (This mixture will be thick!)

2 eggs

1 8oz block of cream cheese, room temperature

1 lb 4x or 10x confectioners sugar, sifted

1 tsp vanilla

Mix all ingredients together and pour on top of first mixture.

Bake at 325* for approximately 1 hour.

Cool and cut into squares. (I am an outside piece gal while my boys all love the gooey center!)
