I can honestly say so much of life has happened since my last post. Where to even begin?
At the top of the list, we welcomed our sweet little babe, Grant into the world, in May and it has been the sweetest season of life yet! It has taken all of my time, energy and mind space to keep up with 3 littles. But I am loving this time and change of pace, while being home during the days for our babe and being able to be at all the school functions, parties and field trips! With 3, there is something to do or stay on top of every single day!
It has long been a dream of mine to own my own bakery. The idea of being able to bake what my heart desires that day and it be different each day has been a fantasy. Even recently, I have wanted to do a mobile bakery. Hear me out. Like a closed in trailer, with a little window, bakery stand that can travel around to different events. I would sell my baked goods out of it that I had made that week! Of course it would be equipped with AC for the summers and fall and heaters for the winter and spring, we do live in extreme climate changes around here! The dream is still there!
Which leads me to my next point. On a very small scale, I will be opening up a bakery stand, called Baking in the Barn. Which is where I do my baking, in our barn, which is more like a man cave/second home for us. We have thrived out there and had it all set up for an in home bakery situation, however, after almost completing the barn project, we found out we were expecting our third and final miracle baby boy. At the time, we were shocked, panicked, nervous, wondering how we were going to make it work. But now, looking back, God’s hand was at the core of it and He knew we needed Grant long before we did. Now, I know it’s cliche to say, but I honestly could not imagine our lives without him. He is the perfect completion, the grand finale and the best baby!
Baking in the Barn, will be inside Gather and Co. Mercantile right here in downtown Cairo. I love that I can replenish the stand on my own pace and it will be great to have feedback from the community as to what they want to see more of. The Christmas Open House for Gather and Co. Mercantile is this weekend, Nov. 15, 10-3pm. Please shop small this holiday season and visit all of the vendors that will fill the mercantile and make it special. I can’t wait to see all of the merchandise that will be available!
In the meantime, I will be updating the blog, on a more recent posting schedule, now that I will be back to my baking shenanigans! I can’t promise how often I will post new recipes and pictures, but I will get it done. I laughed with my bestie Alice today and joked that all my ducks aren’t even in the same pond, much less in a row. Any advice to keep my organizational skills and sanity during child raising years would be much appreciated.
Stay tuned for a new start and fresh baked good from the barn coming soon. I look forward to sharing this journey with y’all!
Happy Baking Friends
XOXO, Cori
