I must fess up before starting. This was not one of the recipes I found in the old photo books. I had some bananas that needed using and I love a good bread, so I pinterested the recipe and I must say, it’s good.

It’s super easy and one of my favorite ones I have made to date. I am the only one in my house that will eat this, so I rarely get to make it, unless I am headed into work the next day.

Ingredients:

1/2 cup unsalted butter at room temp

1 cup granulated sugar

2 large eggs

4 over ripe bananas, mashed

1 tsp vanilla

1 3/4 cups flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp fine sea salt

1 cup chopped walnuts (optional)

Directions:

Preheat oven to 350*.

With a mixer, blend butter and sugar together. Add eggs and vanilla, mix. Then add mashed bananas.

In a separate bowl use a fork to mix flour, baking soda, baking powder, walnuts and sea salt.

Fold in ingredients of first bowl with mashed bananas. Do not over mix.

Spray a standard size loaf pain with bakers joy. Add banana bread ingredients.

Bake for 1 hour or until you can insert a toothpick and it comes out clean.

Let cool for at least 10 minutes before removing from the pan.
